Halkidiki
Halkidiki is the mainland's answer to the islands: a three-fingered peninsula south of Thessaloniki where pine forest runs down to clear, shallow water and the beaches fill with Greek families rather than package tours. Kassandra, the western finger, is closest to the airport and the liveliest; Sithonia, in the middle, is wilder and emptier; Athos, the eastern finger, is a monastic republic you can only see from a boat. The all-inclusives sit at the base of Kassandra, on the gulf between the first two fingers, and at the gateway to the third.

Which finger
Kassandra is the finger most visitors know: closest to Thessaloniki, ringed by a road, with sandy beaches on both sides and the region's resort villages. Nea Moudania, at its neck, is where the peninsula begins and where the shortest transfers land. Sithonia, the middle finger, is the one Greeks drive to: pine-backed coves, fewer villages, and water so clear and shallow that children can wade for a long way out. Between the two, the Toroneos gulf shore around Gerakini catches the calm of both.
The third finger is Mount Athos, a self-governing community of monasteries with no road in, no entry without a permit and no entry at all for women. Ouranoupoli, the last village before the border, is the base: resorts there run boats along the Athos coast so the monasteries can be seen from the water, and Ammouliani, the small island offshore, is the local beach day.
When to go
June and September, when the sea is warm, the pines smell strongest and the Thessaloniki weekend crowd has not yet arrived or has gone home. July and August are hot and, on Kassandra, busy. The season is shorter than Crete's at both ends: May can still be cool in the water and October turns quickly. Summer weather risk is the afternoon thunderstorm that rolls off the mainland, not anything tropical.
Beyond the resort
Thessaloniki itself, Greece's second city, with a Byzantine old town, a seafront of cafés and the country's best food scene outside Athens, is the reason to fly in a day early. Nearer the beaches: the Petralona cave with its prehistoric finds, the ruins of Stagira, where Aristotle was born, and the boat along the Athos coast past monasteries that have stood since the tenth century. Divers work the reefs off Sithonia; everyone else waits for the sunset over the gulf.
